Series |
| These
series of classes are designed for those of you who are interested
in learning proper cooking or baking techniques and skills. Classes
are held in the culinary arts laboratories and lecture rooms. In
most cases, you have the opportunity to prepare and produce certain
foods, sample, and discuss methods and techniques with the chef
instructor. The culinary series are modular. This means you may
pick and choose classes that fit your personal interests. In order
to ensure individual attention and safety, class enrollment is limited.

Dress
Code: As a safety precaution, participants in all culinary classes
are encouraged to wear covered, non-slip shoes (e.g. tennis shoes)
and comfortable slacks. Aprons or any other personal items may also
be brought to class. The college, however, will not be held responsible,
if such items are lost or stolen. |
| BAKING BASICS : Cacao Crazy |
| This fall we welcome chocolatier Melanie Boudar. Chef Melanie fell in love with chocolate on her frequent trips to Belgium as a diamond buyer. She was later trained at the Ecole Chocolat in Canada and the Culinary Institute of America. Her artisan confections won the Judges Choice Award two years in a row at the Kona Chocolate Festival. Chef Melanie owns Sweet Paradise Chocolatier, a gourmet chocolate shop and cafe in windward Kailua Town.
Cacao Crazy
Cacao has been used for centuries as a beverage and the delicacy we know as chocolate. From Mayan and Aztec uses of cacao seeds for currency and ceremonies, the grand European chocolate houses, the current chocolate health craze, to gourmet chocolate bars of infinite flavor combinations, chocolate has played an important role in many cultures. Discover the history, cultivation, and politics of cacao with chocolatier Melanie Boudar. There will be an extensive tasting of single origin chocolates from the world’s finest plantations including rare Porcelana from Venezuela, wild harvested Bolivian cacao, cacao from Equador, the Carribean, Madagascar and locally grown Hawaiian chocolate. We will also prepare and taste three recipes: Aztec hot chocolate with Hawaiian chili pepper, a chocolate and salted-caramel tart and chocolate ginger pumpkin bread pudding. |
