| Public Culinary Series |
| These series of classes are designed for those of you who are interested in learning proper cooking or baking techniques and skills. Classes are held in the culinary arts laboratories and lecture rooms. In most cases, you have the opportunity to prepare and produce certain foods, sample, and discuss methods and techniques with the chef instructor. The culinary series are modular. This means you may pick and choose classes that fit your personal interests. In order to ensure individual attention and safety, class enrollment is limited. To enroll, please call 808-734-9211.
Dress Code: As a safety precaution, participants in all culinary classes are encouraged to wear covered, non-slip shoes (e.g. tennis shoes) and comfortable slacks. Aprons or any other personal items may also be brought to class. The college, however, will not be held responsible, if such items are lost or stolen. |
Return of the Dragon: Szechuan Cuisine |
| Ever hear of a place called the Golden Dragon restaurant? Well, lucky you because Chef Steve Chiang, the long-time executive chef of one of the top Chinese restaurants in town has agreed to teach a special class for us. In addition to a lifetime of cooking experience, Chef Chiang’s family hails from Szechuan, Shanghai and Taiwan, giving him a solid understanding of the breadth and depth of the true flavors of Chinese cuisine. Come join us.
Szechuan Cuisine
Although Szechuan dishes are famous for their extreme heat, the spicy hot dishes are relatively few among the thousands of Szechuan recipes. In this class you will learn the true Szechuan cuisine: stressing colors, sweet aroma, vibrant tastes, presentation, fresh seasonings and the varying degrees of heat – from tongue tingling to super spicy!. You will learn to cook three recipes that showcase the flavors of Szechuan: kung pao tender shrimp, ma po tofu, bon bon chicken and the fascinating origins of these dishes.
